Finger limes (citrus australasica) is a small thorny tree that is native to rainforests of NSW and Queensland.
We have grafted original cuttings onto robust stock producing a virile bush that is extremely hardy and productive.
The fruit of the finger lime is cylindrical and contains individual vesicles like caviar that burst in your mouth with a refreshing rejuvenating flavour.
The taste is quite unique and smooth, not sour on the palate.used in carbonated beverages a visual and taste sensation is achieved.
Ideal on oysters, fish or meats as a garnish, in a salad dressing or in cooking, finger limes are simply sensational.
